Olive Oil Lab Certifications Explained: Acidity, Peroxide & Polyphenols

Why Lab Documentation is Non-Negotiable

In international bulk olive oil trade, a shipment without a complete Certificate of Analysis (CoA) is a shipment you should not accept. Lab documentation protects you legally, verifies grade classification, and satisfies import requirements in the EU, US, and increasingly in Asia-Pacific markets.

Here is a plain-language guide to the key parameters, what they measure, and what thresholds to look for.

Free Acidity (%)

Free acidity (expressed as % oleic acid) is the most-cited quality indicator. It measures the degree of hydrolysis — essentially how much the oil has degraded.

  • Extra Virgin: ≤0.8%
  • Virgin: ≤2.0%
  • Lampante: >2.0%

Buyer tip: For premium applications, specify ≤0.3% to secure top-grade early-harvest oil. Low acidity also gives you more headroom against degradation during shipping and storage.

Peroxide Value (meq O₂/kg)

Peroxide value (PV) measures primary oxidation — the initial stage of rancidity development. High PV indicates the oil has already begun to oxidise.

  • Extra Virgin: ≤20 meq O₂/kg (IOC standard)
  • Best practice: Specify ≤12 for premium or long-shelf-life applications

Buyer tip: PV alone is not sufficient. Combine with K270 (spectrophotometric index) to detect secondary oxidation that PV may miss.

Polyphenol Content (mg/kg)

Total polyphenols (measured as total phenolic compounds, TPC) are the health-active compounds in olive oil. They also contribute to the oil’s oxidative stability and shelf life.

  • <150 mg/kg: Low phenolic content — short shelf life, mild flavour
  • 150–300 mg/kg: Standard commercial EVOO range
  • >300 mg/kg: High phenolic — supports EU health claim (Regulation 432/2012)

The EU health claim (“olive oil polyphenols contribute to the protection of blood lipids from oxidative stress”) can only be made on oils with ≥250 mg/kg hydroxytyrosol and its derivatives. This adds real commercial value in health-conscious retail markets.

The IOC Panel Test

The International Olive Council (IOC) requires an organoleptic (sensory) evaluation by a certified panel for EVOO classification. The panel scores “fruitiness”, “bitterness”, and “pungency” and identifies defects (rancid, fusty, musty). An oil can pass chemistry but fail panel — and be re-graded to Virgin.

Buyer tip: Always request both the chemical CoA and the panel test certificate. For EU market entry, both are required under EC Regulation 29/2012.

What to Request from Your Supplier

A complete documentation package for a bulk shipment should include: CoA (acidity, PV, K232, K270, ΔK, wax content, fatty acid profile), IOC panel test, phytosanitary certificate, EUR.1 or REX certificate of origin (for preferential EU customs tariff), and organic certificate (if applicable).

Working with a broker who coordinates pre-shipment inspection by an independent lab (SGS, Bureau Veritas, or equivalent) gives you a second layer of assurance before the container is sealed.
